The Bees Knees

The Bee's Knees boasts a fascinating history, with tales of its invention intertwined with influential figures such as Mrs. JJ Brown, famously known as the 'Unsinkable Molly Brown,' and believed to have originated in the glamorous setting of the Café Parisien with head bartender Frank Meier at the Hotel Ritz Paris in 1921. Whether it emerged out of Prohibition necessity in the United States or found its roots in the vibrant bars of Paris, the Bee's Knees has firmly established itself as a timeless classic. Crafted with the perfect blend of Silent Pool Gin, zesty lemon, and local honey, this cocktail pays homage to the tradition of the Bee's Knees.

Ingredients

50ml Silent Pool Gin
25ml Freshly Squeezed Lemon Juice
20ml Honey Water

Method

Add all ingredients in a shaker with ice

Shake vigorously for 8 to 12 seconds
Double strain in a coupette glass
Garnish with a lemon peel

How to make Honey Water?

Simply add the half cup of honey and half cup of water into a small saucepan over medium heat. Stir until the honey is dissolved. Allow to cool and transfer to an airtight container. The honey water will keep, refrigerated, for up to one month. Why not put a Watts twist on it and use our honey available in the shop?
